Opinion | Taste Is Evolving Faster Than Tradition — And Algorithms Are The New Chefs

What becomes desirable no longer comes from inherited wisdom or seasonal logic, but from the platform's engagement logic. Memes compress cultural time. What once took decades now takes days. These two streams'tradition and virality'now coexist, but on an uneven playing field. Traditional foods hold emotional value; viral foods capture attention. The clash is therefore not cultural'it's algorithmic. Taste is evolving faster than tradition because digital incentives reward speed and novelty. But evolution is not destiny; it can be guided. Former petrol station set to be turned into restaurant with takeaway
